Vines’average age : 15 years
Soil & cultivation : Arid, stony, lime and clay soil. Vines cultivated organically under supervision of Ecocert. Ploughed, no chemicals or fertilisers.
Yield : 12 hectolitres/hectare.

Vinification : Pneumatic pressure and gentle racking. No yeast. Fermentation in stainless steel vats at medium temperature.
Maturing : 48 months, including 30 in French oak barrels. Bottled in April 2007.
Production 2,600 bottles of 50cl.
Tasting notes : Luscious golden nectar, rich and succulent. Delightful as an aperitif, it’s just perfect with quality foie gras, superb with Roquefort or ripe Stilton cheeses.
