Vines’average age :   15 years
 
Soil & cultivation :    Arid, stony, lime and clay soil. Vines cultivated organically under supervision of Ecocert. Ploughed, no chemicals or fertilisers.
 
Yield :  12 hectolitres/hectare. 
 
Vinification :   Pneumatic pressure and gentle racking. No yeast. Fermentation in stainless steel vats at medium temperature.
 
Maturing :  48 months, including 30 in French oak barrels. Bottled in April 2007. 
                    Production 2,600 bottles of 50cl.
         
Tasting notes Luscious golden nectar, rich and succulent. Delightful as an aperitif, it’s just perfect with quality foie gras, superb with Roquefort or ripe Stilton cheeses.
