Soil & cultivation :   Arid, stony, clay & limestone soil. Vines cultivated organically under supervision of Ecocert. Ploughed, no chemicals or fertilisers.
 
Yield :  26 hectolitres/hectare
 
Vinification :   Once hand sorted on tables, the grapes are gravity fed into vats. No yeast. Traditional vinification with alternating cap immersion and juice circulation. Five weeks maceration. Pneumatic pressing.
Maturing :  11 months in stainless steel vats
                     Bottled in July 2009
                     Production 14,500 bottles and 300 magnums
 
 
 
Tasting notes :   Garnet coloured with well balanced tannins, and definite hint of ‘garrigue’ herbs on the nose; in the  mouth smooth, full bodied with a touch of pepper  and oozing red fruit and cherries. Great with pheasant, roast pork with Mediterranean vegetables, quality beef fillet.          
 
Serve at :     15-17°C
