Soil & cultivation : Arid, stony, lime and clay soil. Vines cultivated organically under supervision of Ecocert. Ploughed, no chemicals or fertilisers
Yield : 27 hectolitres/hectare
Vinification : Pneumatic pressure and gentle racking for the Carignan. Mourvèdre is bled. No yeast. Fermentation in stainless steel vats at medium temperature. |

Maturing : 7 months in french oak barrels. Bottled in April 2007. Production 1,600 bottles.
Tasting notes : A rosé with a difference ! Beautifully structured with delicate tannins, great colour and character, it combines freshness with a touch of spice and black berries. Delightful with roast lamb and veal dishes, it is ideal for delicately spiced, sophisticated Oriental cuisine. Serve at 12-15°C. |
