Blended from : Grenache 88 % Mourvèdre 4 % First Launched : 1996
Vines’ average age : 21 years
Soil & cultivation : Arid, stony, clay & limestone soil. Vines cultivated organically under supervision of Ecocert. Ploughed, with no use of chemicals or fertilisers.
Yield : 26 hectolitres/hectare
Vinification : Once hand sorted on tables, the grapes are gravity fed into vats. No yeast. Traditional vinification with alternating cap immersion and juice circulation. Four weeks maceration. Pneumatic pressing

Maturing : 36 months in stainless steel vats. Bottled in September 2006.
Neither fined nor filtred
Production : 4 500 bottles and 240 magnums
Tasting notes : Deep garnet red with aromas of red fruit, lavender and wild thyme; very smooth
with soft tannins, clean yet fruity with distinct flavours of damsons and hints of spice.
Drink with quality ham and potatoes ‘dauphinoise’, poultry in pepper and tomato sauces, roast
game birds, lightly spiced creamy curries and Oriental dishes.
Serve at : 14-16°C.
