Yield :   28 hectolitres/hectare
 
Vinification :  Pneumatic pressure and gentle cold racking. No yeast. Fermentation in stainless steel vats at medium temperature
 
Maturing : 30 months of which 12 in French oak barrels,  bottled in April 2007,   Production:   4,400 bottles.
             
Tasting notes:   Luscious golden wine with a complex nose and overtones of dried flowers, citrus and spice. Rich, rounded mouth : an intriguing blend of tangy herbs with hints of honey and apple. A sophisticated wine to enjoy as an aperitif, or with great fish dishes, Chinese cuisine, Roquefort, Stilton or creamy cheeses, tropical fruit, praline based desserts.
 
Serve at : 12-14°C.
